01 - Preheat oven to 350°F. Line two baking sheets with parchment paper.
02 - In a medium bowl, whisk together flour, baking soda, cinnamon, ginger, nutmeg, cloves, and salt.
03 - In a large bowl, combine brown sugar, melted coconut oil, applesauce, maple syrup, and vanilla extract. Mix until smooth.
04 - Gradually add the dry ingredients to the wet mixture, stirring until a soft dough forms.
05 - In a small bowl, mix the optional topping sugar and cinnamon.
06 - Scoop out tablespoon-sized portions of dough, roll into balls, and if desired, roll each ball in the cinnamon-sugar topping.
07 - Place cookies on prepared baking sheets, spacing them about 2 inches apart. Gently flatten each ball with your palm.
08 - Bake for 10–12 minutes, until edges are set and tops look dry.
09 - Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
