01 - Preheat the oven to 350°F. Line two baking sheets with parchment paper.
02 - In a large bowl, whisk together the rolled oats, flour, baking soda, baking powder, salt, and cinnamon until well blended.
03 - In a separate bowl, combine the melted coconut oil, brown sugar, applesauce, maple syrup, lime zest, lime juice, and vanilla extract. Whisk until smooth and fully incorporated.
04 - Pour the wet ingredients into the dry ingredients. Mix gently until just combined, being careful not to overmix.
05 - Gently fold in the diced strawberries and raisins until evenly distributed throughout the dough.
06 - Let the dough rest for 5 minutes to allow the oats to hydrate fully.
07 - Using a cookie scoop or tablespoon, drop heaping spoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
08 - Bake for 12 to 14 minutes, or until the edges are golden brown and the centers are set.
09 - Remove from the oven and let cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
