01 - Preheat the oven to 350°F. Line two baking sheets with parchment paper.

03 - In a separate bowl, mix the melted coconut oil, brown sugar, granulated sugar, applesauce, and vanilla extract until smooth and fully incorporated.
04 - Add the wet ingredients to the dry ingredients and stir until just combined. Be careful not to overmix.
05 - Fold in the diced pear, raisins, and nuts (if using), making sure the fruit is evenly distributed throughout the dough.
06 - Drop rounded tablespoons of dough onto the prepared baking sheets, spacing about 2 inches apart to allow for spreading.
07 - Bake for 11-13 minutes, or until the edges are golden and the centers look set but still soft.
08 - Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely before storing.
