01 - Preheat the oven to 350°F. Line two baking sheets with parchment paper.
02 - In a large bowl, whisk together melted coconut oil and sugar until smooth. Add pineapple juice, orange juice, orange zest, and vanilla extract. Mix well.
03 - In a separate bowl, combine flour, baking soda, baking powder, and salt.
04 - Gradually add the dry ingredients to the wet mixture, stirring until just combined.
05 - Gently fold in the diced pineapple, ensuring pieces are well distributed.
06 - Scoop tablespoon-sized balls of dough and roll them in the additional sugar to coat.
07 - Place cookies 2 inches apart on the prepared baking sheets.
08 - Gently flatten each cookie with your palm or the bottom of a glass.
09 - Bake for 11–13 minutes, or until edges are set and bottoms are lightly golden.
10 - Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
