01 - Preheat the oven to 350°F and line two baking sheets with parchment paper.
02 - In a large bowl, beat the vegan butter and 3/4 cup sugar until light and fluffy.
03 - Mix in the mashed papaya, lime juice, lime zest, and vanilla extract until fully incorporated.
04 - In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
05 - Gradually add the dry ingredients to the wet mixture, stirring until just combined. Avoid overmixing.
06 - Scoop tablespoon-sized portions of dough, roll into balls, and coat each ball lightly in the extra granulated sugar.
07 - Place the dough balls on the prepared baking sheets, spacing about 2 inches apart. Gently flatten each ball with your hand or the bottom of a glass.
08 - Bake for 10–12 minutes, until the edges are just beginning to turn golden.
09 - Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
