01 - Preheat oven to 350°F. Line a baking sheet with parchment paper.
02 - In a large bowl, whisk together rolled oats, all-purpose flour, baking soda, ground cinnamon, and fine sea salt.
03 - In a separate bowl, mix melted coconut oil, light brown sugar, unsweetened applesauce, and vanilla extract until smooth.
04 - Add wet ingredients to dry mixture and stir until just combined.
05 - Fold in raisins (or vegan chocolate chips) and nuts if using.
06 - Scoop heaping tablespoons of dough onto prepared baking sheet, spacing 2 inches apart.
07 - Flatten each mound slightly with fingertips.
08 - Bake 11 to 13 minutes, until edges are golden and centers look just set.
09 - Cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
