01 - Preheat the oven to 350°F. Line two baking sheets with parchment paper.
02 - In a large bowl, combine the mashed kiwi, melted coconut oil, sugar, lime zest, lime juice, vanilla, and plant-based milk. Mix until well combined.
03 - In a separate bowl, whisk together the flour, baking powder, baking soda, and salt until evenly distributed.
04 - Add the dry ingredients to the wet mixture and stir until a soft dough forms. Be careful not to overmix.
05 - Scoop tablespoon-sized portions of dough, roll into balls, and coat each ball lightly in the extra sugar.
06 - Place the balls 2 inches apart on the prepared baking sheets. Gently flatten each cookie with your palm or the bottom of a glass.
07 - Bake for 10-12 minutes, or until the edges are just set and the centers look slightly underbaked.
08 - Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
