01 - Preheat oven to 350°F. Line two baking sheets with parchment paper.
02 - In a medium bowl, whisk together flour, baking soda, baking powder, and salt until well blended.
03 - In a large bowl, beat together sugar and vegan butter until creamy and smooth, approximately 2-3 minutes.
04 - Mix in applesauce, lime zest, lime juice, and vanilla extract until fully combined and mixture is uniform.
05 - Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Do not overmix.
06 - Fold in chopped dried cherries until evenly distributed throughout the dough.
07 - Scoop tablespoon-sized portions of dough and roll into balls. Roll each ball generously in the extra granulated sugar until fully coated.
08 - Place balls 2 inches apart on prepared baking sheets. Gently flatten each cookie with the palm of your hand to about 1/2 inch thickness.
09 - Bake for 11-13 minutes, or until edges are lightly golden brown and centers appear set.
10 - Let cookies rest on the baking sheet for 5 minutes to firm up, then transfer to a wire rack to cool completely before storing.
