01 - Preheat oven to 350°F. Line two baking sheets with parchment paper.

03 - In a large bowl, beat together vegan butter and brown sugar until creamy and smooth. Mix in applesauce and vanilla extract until fully incorporated.
04 - Gradually add the dry ingredients to the wet mixture, stirring just until combined. Do not overmix.
05 - Fold in raisins and, if using, chopped nuts until evenly distributed throughout the dough.
06 - Scoop tablespoon-sized portions of dough onto prepared baking sheets, spacing about 2 inches apart to allow for spreading.
07 - Bake for 10–12 minutes, or until edges are golden brown and centers look just set.
08 - Let cookies cool on the pan for 5 minutes, then transfer to a wire rack to cool completely before serving.
