01 - Preheat your oven to 350°F. Line two baking sheets with parchment paper.
02 - In a large bowl, whisk together the oats, flour, baking soda, baking powder, cinnamon, nutmeg, and salt until well blended.
03 - In a separate medium bowl, combine the melted coconut oil, brown sugar, applesauce, plant-based milk, and vanilla extract. Whisk until smooth and fully incorporated.
04 - Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
05 - Fold in the diced apple and raisins until evenly distributed throughout the dough.
06 - Using a tablespoon or small cookie scoop, drop dough onto the prepared baking sheets, spacing cookies about 2 inches apart. Gently flatten each cookie with your fingers or the back of a spoon.
07 - Bake for 11 to 13 minutes, or until the edges are golden and the centers look set.
08 - Allow cookies to cool for 5 minutes on the baking sheet before transferring to a wire rack to cool completely.
