01 - Preheat oven to 350°F. Line two baking sheets with parchment paper.
02 - In a large bowl, cream together the butter, sugar, and honey using an electric mixer until light and fluffy, about 2 minutes.
03 - Add the ricotta cheese, egg, and vanilla extract. Mix until smooth and well combined.
04 - In a separate bowl, whisk together the flour, baking powder, and salt.
05 - Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
06 - Drop tablespoon-sized mounds of dough onto the prepared baking sheets, spacing them 2 inches apart.
07 - If desired, sprinkle tops with coarse sugar.
08 - Bake for 11–13 minutes, or until the edges are lightly golden but the centers are still soft.
09 - Cool cookies on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
