01 - Preheat oven to 350°F. Line a baking sheet with parchment paper.
02 - In a dry skillet over medium heat, toast 1/3 cup sesame seeds until golden and fragrant, about 2–3 minutes. Let cool.
03 - In a large bowl, whisk together almond flour, toasted sesame seeds, baking soda, and salt.
04 - In a separate bowl, combine melted butter, sweetener, egg, and vanilla. Mix until smooth.
05 - Add wet ingredients to dry ingredients; stir until a soft dough forms.
06 - Fold in chocolate chips.
07 - Scoop 1½-tablespoon portions of dough onto the prepared baking sheet, spacing about 2 inches apart. Flatten slightly with your fingers. Sprinkle reserved sesame seeds over each cookie, if using.
08 - Bake for 10–12 minutes, or until edges are golden.
09 - Allow cookies to cool on the baking sheet for 10 minutes before transferring to a wire rack to cool completely.
