05 - Scoop tablespoon-sized portions of dough, roll into balls, and coat in granulated sugar. Place on prepared baking sheets about 2 inches apart.
06 - Gently flatten each dough ball with the palm of your hand.
07 - Bake for 10 to 12 minutes until edges are set and centers remain soft. Cool on baking sheets for 5 minutes, then transfer to wire rack to cool completely.
08 - Whisk together powdered sugar, plant-based milk, and vanilla extract until smooth and thick.
09 - Once cooled, drizzle or spread frosting over cookie tops. Allow frosting to set before serving.
