01 - In a medium saucepan, combine oats, milk, water, brown sugar, cinnamon, vanilla extract, and salt. Mix thoroughly to distribute spices evenly.
02 - Place saucepan over medium heat and bring mixture to a gentle simmer. Stir occasionally to prevent sticking and ensure even heating.
03 - Once mixture begins to thicken (approximately 5 minutes), stir in raisins. Continue stirring to distribute fruit evenly throughout the oats.
04 - Continue cooking for 3-5 additional minutes, stirring frequently. Oats should be creamy and tender, and raisins should be plump and softened.
05 - Remove from heat. Divide oatmeal evenly between two serving bowls. Top with walnuts, extra cinnamon, honey or maple syrup, and fresh fruit if desired. Serve immediately while warm.
